Finally had time to make pork and cabbage mandu for a snack. The first time in three years I’ve been able to fold my own dumplings and make the wrappers from scratch. Missed this. Grateful for the space to breathe and start healing the burnout.

-I first started researching recipes and techniques in April 2021. The results were good, but I was still missing the defined honeycomb texture. After a few trials and many errors, I figured out my mistakes, and today February 27, 2022, I made the most delicious Martabak Manis! Approvals from everyone in the house - even my mother-in-law who came by to drop off some items 😍

Martabak Manis: Thick Indonesian Pancake

Ingredients

225 grams of bread flour - sifted
30 grams of white sugar
1 egg, beaten
1 tsp of vanilla extra (optional)
250 ml + 3 tablespoons of warm water
¼ teaspoon of water dissolved into the water
1 teaspoon of baking soda dissolved into 1 tablespoon of warm water
Extra sugar for sprinkling onto the Martabak

This is my absolute favourite soup: Miso Ginger Squash Soup made with Kabocha and Butternut Squash, flavoured with cream and white organic Miso. Enjoy. Full recipe on the blog! 1 medium Kabocha squash
1 medium Butternut squash
2-3 celery stalks
2 carrots
1 small to medium leek
1 small white onion
2-4 garlic cloves (2 if they are larger)
1 ½ inch piece of ginger
¼ cup (half a stick of butter - but I'm not gonna lie, I use more than that -closer to 1/2 cup - dare to judge me!)
6 cups of water
2-3 large tablespoons of White Miso
1 cup of heavy cream
Olive oil for roasting of squash and vegetables
Salt and white pepper to taste

As Chinese immigrants braved crossing the Pacific to construct infrastructure for the Gold Rush in the 1800s, they brought traditional ingredients, cooking methods, and recipes. Disclaimer, I’m not Italian, nor am I an expert at Italian food. I am a lover of bread and Focaccia is one of my favourites. My recipe for a quick and easy Focaccia is meant to pay homage to the bread that has origins as far back as the Roman empire and can be found across countries like Italy, Spain, Turkey, Greece, and France.

Focaccia is crispy and salty on the outside, while airy and moist on the inside. It’s a juxtaposition of deliciousness. I topped mine with rosemary and tomatoes from my garden and garlic and olives I found in the back of my fridge. No food waste here!

It’s been a week full of biscuit recipe testing, baking and eating. Thank you to everyone that tested the recipes for me!

The last biscuit of our series is the drop biscuit. And it’s as basic as it sounds. Instead of rolling the dough, you simply drop it on the baking tray. I use an ice cream scoop to shape the biscuit before plopping it unceremoniously onto the lined baking tray; however, you can use two spoons. The recipe is also simple because the ingredients are probably already in your fridge and pantry.

It’s an easy biscuit to make, and you can use the base recipe to add any flavourings you wish. I made a Jalapeño Cheddar drop biscuit because I have some peppers that were about to go off, and I had recently gone to Costco for a cheese run, so I’m flush with cheddar. I added some scallions as well since I seem to have so many around the house lately.

The biscuits came out pillowy soft, cheesy and buttery, with a hint of spice from the jalapeño. They were a hit with Cameron, who quickly ate two.

There’s nothing better than biting into a buttery, flakey scone with its hint of lemon and the bright burst of cranberry flavour. Pair this scone with an expresso, and you’re set for a brilliant breakfast.

Don’t be intimidated. Scones, and I mean delicious scones, are not hard to make if you use the right ingredients: cold butter, buttermilk, lemon zest, and fresh cranberries. If you don’t like cranberries, substitute with blueberries. I’ve made the same recipe with frozen wild blueberries, and it was a hit with everyone.

When making this recipe, measure your butter, then place it into the freezer for an hour. When you’re ready to use it, use a box grater to grate the butter into manageable pieces.

I know it's been a while since I posted a picture of Lien's creations. She's been a bit busy!

Last week she made the Black Bean Noodles recipe, but I didn't have time to post. I was dealing with some massive "stuff" at work, and I was down in the dumps. It’s okay not to be okay. And I was NOT okay.

Back to Lien and her noodles. She did an AWESOME job. They looked a-mazzzing. Lien did say she ended up with a runnier sauce, but I think she put in too much chicken stock. Here's my tip to fix a runnier sauce - potato starch. Add some starch to a few tablespoons of cold water, stir until incorporated and then add the slurry to your sauce and wait for it to thicken.

Super proud of my sister Lien. Even though she's busy with life, work and moving into a new house, she's really taken to cooking. I can't wait until we are finally reunited, and she can make me dinner again.
